Ingredients: 3-4 chicken breasts, grilled
3-5 tomatoes, diced Handful of fresh basil, chopped 1 clove of garlic, minced 1 tbsp olive oil 1 tbsp red wine or balsamic vinegar Salt and pepper to taste
Directions:
Grill chicken breasts to 165 degrees Fahrenheit. Combine the rest of the ingredients in medium size bowl. Refrigerate for 30 minutes before serving. Top chicken breasts with desired amount of bruschetta.
*Can also eat bruschetta on a salad, stirred into leftover rice or quinoa, in hummus with pita chips, and on top of a toasty baguette.
