Makes 2 servings
Ingredients:
1 cup orzo
1 bell pepper (any color is fine)
½ red onion
2 tomatoes
2 cups arugula
½ cup peas
½ cup crumbled feta cheese
2/3 cup olive oil
Juice of one lemon
1 Tbsp Italian seasoning
1 tsp salt
1 tsp pepper
Directions:
Cook orzo according to instructions on box.
Chop pepper, onion, and tomatoes into quarter-inch pieces.
Combine oil, lemon juice, and seasonings and mix until well combined.
When orzo is done cooking, rinse with cold water to cool and mix with diced vegetables. Add in arugula and peas.
Pour lemon dressing over orzo vegetable mixture and stir until well coated.
Sprinkle with feta cheese and enjoy.
Pair with grilled chicken, salmon, or shrimp.
