Serves 4
Ingredients:
1 pound protein of choice (shrimp, chicken, steak, edamame), cut into bite size pieces
2 cups vegetables of choice, cut into bite size pieces (about 1/2-1 inch)*carrots, broccoli, onions, mushrooms, bell peppers
2 Tbsp Sesame oil, divided
Noodles: rice, fettuccini, soba; cooked
Optional toppings: peanuts, lime wedges, cilantro
Peanut Sauce
1/4 cup peanut butter
1/4 cup reduced sodium soy sauce
3 cloves garlic, minced
2 tablespoons honey
1 tablespoon fresh ginger, minced or grated
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon Sriracha
Directions:
Mix together all of the ingredients to make peanut sauce and set aside.
Heat pan to medium-high. Add 1 tbsp oil, once oil is hot add meat to the pan. Season meat with salt in pepper to taste and cook through. Remove meat from pan and set aside.
Add 1 tbsp sesame oil to pan, once oil is hot add vegetables. Season with salt and pepper and cook until tender.
Add protein back to pan with vegetables. Add 4 cups cooked noodles and peanut sauce. Mix together.
Optional: top with squeeze of lime, cilantro leaves and peanuts.
